The Leftover Scramble
The Leftover Scramble:
Ingredients:
2 large eggs
1/2 cup leftovers (ground meat, chili, roasts, oh my!)
Salt and black pepper to taste
Mix-ins of your choice: fresh herbs, spices, grated cheese, sour cream or plain Greek yogurt, avocado, etc.
1 tablespoon cooking fat (lard, tallow, or butter/ ghee is best)
Directions: In a skillet, heat your cooking fat over medium-high. Let it melt and coat the bottom of the skillet. In a bowl, crack and whisk your eggs until they lighten slightly in color. Pour into the skillet, add your meat and any cheese, then sprinkle with salt and pepper.
Using a spatula, gently stir and scramble the eggs, meat, and cheese together. Continue cooking for another 2-3 minutes or until the eggs are cooked to your desired level of doneness and the cheese is melted. Pull off the hot stove and add in any other desired mix-ins and enjoy your nutrient-boosted leftover scramble!
Heidi’s Favorite: This is Heidi’s lunch almost every day - we love to cook so our fridge is filled with plenty of tallow, leftover meats, and bone broth. This is her personal favorite to whip up:
1 tablespoon tallow (very flavorful!)
2-4 eggs (protein!)
Leftover beef or pork roast (more protein!)
1/4 bone broth (nutrient dense AND flavorful!)
So much salt
She cooks this dish just like above, but lazier (just throwing everything in the skillet and stir until cooked!) - it makes a perfect first meal for the day because it’s incredibly easy, nutritious, and the tallow and bone broth add a depth of flavor so no other seasonings are needed. Plus, it clears out room in the fridge for our next round of cooking!
