Smoked Salmon & Cream Cheese Omelette

Smoked Salmon & Cream Cheese Omelette:

Ingredients:

  • 2 large eggs

  • 2 ounces smoked salmon, thinly sliced

  • 2 tablespoons cream cheese (you can also use feta)

  • 1 green onion, finely chopped

  • Salt and pepper to taste

  • 1 tablespoon cooking fat (lard, tallow or butter/ ghee is best)

Directions: Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk them until well combined and slightly lightened in color. Heat your cooking fat in a skillet over medium-high heat. Make sure the skillet is well-coated to prevent sticking.

Pour the beaten eggs into the skillet, swirling them around to ensure even distribution. Let them cook for about 1-2 minutes or until the edges start to set. Place the smoked salmon slices evenly on one half of the omelette. Spoon the cream cheese in small dollops over the smoked salmon, then sprinkle the finely chopped green onion over the cream cheese.

Carefully fold the other half of the omelette over the filling, creating a half-moon shape. Continue to cook for another 1-2 minutes until the omelette is set but still slightly runny on top. If desired, you can cover the skillet with a lid to help it cook evenly. Gently slide the omelette onto a plate and enjoy!
