Egg, Sausage, & Cheese (Non-Mc) Muffins:
Ingredients:
6 large eggs
1/4 cup half-and-half or heavy cream
1/2 cup low-sugar sausage, cooked and crumbled
1/2 cup grated cheese or your choice
Salt and pepper to taste
Directions: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with silicone muffin cups. In a bowl, whisk together the eggs, half-and-half, salt, and pepper until well combined. Distribute the sausage evenly among the muffin cups. Pour the egg mixture over the sausage, filling each cup about two-thirds full. Sprinkle shredded cheese on top of each muffin cup.
Bake in the preheated oven for approximately 20-25 minutes or until the egg muffins are set and lightly golden on top. Allow the egg muffins to cool for a few minutes before removing them from the muffin tin.
BONUS: The best part about egg muffins is you can make them so many ways! You can replace the sausage with bacon or ham, swap out your cheeses, or add diced veggies to mix up those muffins.
