Pulled Pork

Perfect Pulled Pork:

Ingredients (BASE):

  • 3-4 pounds pork shoulder roast

  • 1 large white onion, sliced

  • 4 cloves garlic, minced

  • 1 tablespoon paprika

  • Salt and black pepper to taste

  • 1/4 cup apple cider vinegar

  • 2 cups bone broth or water

  • 2 tablespoons cooking fat

Ingredients (BONUS):

  • Same as above, plus 2-3 tablespoons Dijon mustard, more salt, and a healthy supply of your favorite sugar-free hot sauce

Directions: If time allows, season the beef roast generously with salt and let it sit in the refrigerator for a few hours or overnight for better flavor. Set out at room temperature at least half an hour prior to cooking.

In a large skillet, heat your cooking fat over medium-high. (Salt the roast if not previously salted.) Sear your roast on all sides until browned, 1-3 minutes per side, then transfer the seared roast to a slow cooker or large pot. Add the onion, garlic, paprika, vinegar, and broth or water to the slow cooker or pot with the roast.

Cover and cook on low in your slow cooker for 8-10 hours or on high for 4-6 hours until the pork is tender and easily shreds with a fork. If using a pot on the stove, simmer on low heat for about 4 hours or until the pork is tender.

Once the pork is done, remove it from the slow cooker or pot and use two forks to shred it. Serve in a bowl with the juices and enjoy OR . . .

Simmer the remaining juices in a pot for 20-30 minutes until reduced. While the juices are simmering, mix the pork with the Dijon mustard, extra salt, and hot sauce to taste. Spread the spicy pork mixture into a baking or roasting pan and smother with the reduced juices. Broil for 2-3 minutes and ENJOY. (This is a perfect way to handle the leftovers if you didn’t get through all of the pork roast on the first night!)
