Rosemary Roast Beast:
Ingredients:
3-4 pounds beef roast
1 large white onion, sliced
4 cloves garlic, minced
2-3 sprigs fresh rosemary
Salt and black pepper to taste
2-3 cups bone/ beef broth or water
2 tablespoons cooking fat
Directions: If time allows, season the beef roast generously with salt and let it sit in the refrigerator for a few hours or overnight for better flavor. Set out at room temperature at least half an hour prior to cooking.
In a large skillet, heat your cooking fat over medium-high. (Salt the roast if not previously salted.) Sear your roast on all sides until browned, 1-3 minutes per side, then transfer the seared roast to a slow cooker or large pot. Add the onion, garlic, rosemary, and broth or water to the slow cooker or pot with the roast.
Cover and cook on low in your slow cooker for 8-10 hours or on high for 4-6 hours until the beef roast is tender and easily shreds with a fork. If using a pot on the stove, simmer on low heat for about 4 hours or until the roast is tender.
Once the beef roast is done, remove it from the slow cooker or pot and let it rest for a few minutes before slicing or shredding. Serve in a bowl with the oniony-garlicky juices and enjoy!
