Beef Stew

Bountiful Beef Stew:

Ingredients:

  • 2 pounds beef chuck roast, cubed

  • 1 large white onion, diced

  • 1 bell pepper, diced

  • 2 cloves garlic, minced

  • 2 celery stalks, finely sliced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 tablespoon paprika

  • Salt and black pepper to taste

  • 4 cups beef/ bone broth or water

  • 2 tablespoons cooking fat

Directions: In a large skillet, heat your cooking fat over medium-high. Generously salt the cubed beef and sear on all sides until browned and then set aside.

In the same skillet, add the onion, bell pepper, garlic, and celery, and sauté for ~5 minutes until the vegetables start to soften and caramelize. Transfer the seared beef and vegetables to a slow cooker or large pot. Add the thyme, oregano, paprika, salt and pepper, and stir to combine, and the pour the broth or water into the pot (it should cover the meat and vegetables).

Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. If you're using a pot on the stove, simmer on low heat for at least 1-2 hours, stirring occasionally. Taste, adjust the seasonings if needed, and enjoy!
