Mozzarella-Stuffed Meatballs
Mozzarella-Stuffed Meatballs:
Ingredients:
2 pounds ground beef or pork (or half and half)
2 eggs
1 tablespoon butter, room temperature
Salt to taste
10-12 small mozzarella cheese cubes (about 1/2 inch in size)
Feel free to add the dried herbs and spices of your choice if you’re not a strict carnivore: think onion, garlic, paprika, basil, rosemary, oregano, thyme, etc.
Directions: Preheat your oven to 375°F (190°C). In a mixing bowl, place your meat and add in eggs, butter, salt, and any other seasoning you prefer. Combine thoroughly (get dirty, use your hands!).
Take a small portion of the seasoned meat (about the size of a golf ball) and flatten it slightly in your hand. Place a mozzarella cheese cube in the center and gently encase the cheese with the meat. Roll it into a ball, making sure the cheese is completely sealed inside the meat. Repeat this process with the remaining meat and cheese cubes until you've made all the meatballs.
Place the meatballs on a baking sheet or in an oven-safe dish. Bake in the preheated oven for about 20-25 minutes or until the meatballs are cooked through and have a nice golden-brown exterior. (Check on them half-way through and turn over if needed.)
Once cooked, remove the meatballs from the oven and let them cool slightly before devouring!
