Chicken Thighs With Broccoli Parmesan:
Ingredients:
4 skin-on, bone-in chicken thighs
1 teaspoon paprika
1 teaspoon garlic powder
4 cups broccoli florets
1/2 cup Parmesan cheese, grated
Salt and black pepper, to taste
2 tablespoons olive oil
Directions: Preheat your oven to 400°F (200°C). In a small bowl, mix together the paprika, garlic powder, salt and pepper, and 1 tablespoon of the olive oil. Place the chicken thighs on a baking sheet lined with parchment paper or in an oven-safe skillet. Brush the chicken thighs with the olive oil mixture, ensuring they are well coated on both sides. Roast the chicken thighs in the preheated oven for about 30-35 minutes or until the skin is crispy and the internal temperature reaches 165°F (74°C).
While the chicken is roasting, prepare the broccoli. In a large bowl, toss the broccoli florets with the Parmesan cheese, salt and pepper, and remaining olive oil. Spread the seasoned broccoli evenly on a separate baking sheet. About 20 minutes before the chicken is done, place the broccoli in the oven and roast it for approximately 15-20 minutes, or until it's tender and slightly crispy around the edges.
Once the chicken thighs and broccoli are done, remove them from the oven. Serve the crispy chicken thighs alongside the broccoli and enjoy!
