Lamb Chops With Tzatziki Sauce:
Ingredients:
For the Lamb Chops:
4 lamb chops
2 cloves garlic, minced
2-3 sprigs fresh rosemary
Salt and black pepper, to taste
1 tablespoon olive oil
For the Tzatziki Sauce:
1 cup plain Greek yogurt
1/2 cucumber, grated and excess liquid squeezed out
2 cloves garlic, minced
1 tablespoon fresh dill, chopped
1 lemon, juiced
Salt and black pepper, to taste
Directions: In a small bowl, mix together the olive oil, minced garlic, salt, and black pepper. Place the lamb chops on a baking sheet lined with parchment paper. Brush both sides of the lamb chops with the olive oil mixture and then lay the rosemary on top (sprinkling some of the leaves around). Let your lamb chops sit in the marinade for 30 minutes to an hour.
When ready to cook, preheat your oven to 400°F (200°C) while heating a skillet over medium-high heat. Sear the lamb chops on each side for 2 minutes and then immediately remove from heat.
Transfer to a baking or roasting pan and roast the lamb chops in the preheated oven for about 15 or so minutes, or until they reach your desired level of doneness. For medium-rare, aim for an internal temperature of 145°F (63°C).
While the lamb chops are roasting, prepare the tzatziki sauce. In a mixing bowl, combine the yogurt, cucumber, garlic, dill, lemon juice, and salt and pepper. Mix until well combined.
Once the lamb chops are done, remove them from the oven and let them rest for a few minutes. Serve the lamb chops with a generous dollop of tzatziki sauce on top and enjoy!
