Steamed White Fish & Green Beans:
Ingredients:
1 pound white fish fillets (such as cod or halibut)
2 cups fresh green beans, trimmed
2 cloves garlic, minced
Juice of one lemon
Salt and pepper to taste
1 tablespoon olive oil
Fresh dill, for garnish
Parchment paper
Directions: Preheat your oven to 375°F (190°C). Cut two large pieces of parchment paper, each about 12 x 18 inches.
Place half of the green beans on one side of each parchment paper, and then lay the white fish fillets on top of the green beans. Drizzle the olive oil over the fish and green beans. Sprinkle minced garlic evenly over each fillet. Squeeze fresh lemon juice over the top, and season with salt and pepper to taste.
Fold the parchment paper over the fish and green beans, then fold and crimp the edges to create a sealed pouch. Place the pouches on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
Carefully open the pouches (watch out for hot steam) and transfer the contents to serving plates. Garnish with fresh dill and an extra squeeze of lemon juice. Serve hot, and enjoy your perfectly steamed white fish and green beans!
