Pork Tenderloin & Brussels Sprouts:
Ingredients:
1 pound pork tenderloin
1 pound Brussels sprouts, trimmed and halved
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and black pepper, to taste
1 tablespoon cooking fat
Directions: Preheat your oven to 400°F (200°C). In a large oven-proof skillet or roasting pan, heat your cooking fat over medium-high. Add the minced garlic and sauté for about 30 seconds until fragrant.
Season the pork tenderloin with salt, pepper, and thyme. Place it in the skillet and sear for 2-3 minutes on each side until it's nicely browned.
Add the halved Brussels sprouts to the skillet around the pork tenderloin. Toss them to coat with the garlic and fat and season with additional salt and pepper if desired.
Transfer the skillet to the preheated oven and roast for about 20-25 minutes or until the pork reaches an internal temperature of 145°F (63°C) and the Brussels sprouts are tender and slightly crispy.
Once done, remove the skillet from the oven and let it rest for a few minutes. Slice the pork tenderloin into medallions, serve over the roasted Brussels sprouts, and enjoy!
