Low-Key Lettuce Wraps

Low-Key Lettuce Wraps:

Ingredients:

  • 1 pound ground beef (or pork, turkey, chicken, etc.)

  • 1 small white or purple onion, diced

  • 1/2 bell pepper, diced

  • 2 cloves garlic, minced

  • 1 tablespoon coconut aminos (optional)

  • Salt and pepper to taste

  • 1 head of iceberg lettuce, separated into leaves

  • Green onions and/or cilantro, chopped

  • 1 tablespoon cooking fat

Directions: In a large skillet, heat your cooking fat over medium-high. Add the chopped white or purple onion, bell pepper, and garlic and cook until fragrant and the onion starts to become translucent, about 2-3 minutes.

Add the ground meat to the skillet with the salt, pepper, and the coconut aminos. Cook until the meat is thoroughly browned, breaking it apart with a spoon as it cooks.

To assemble the lettuce wraps, take a lettuce leaf and spoon some of the meat mixture into the center. Add your choice of toppings like the green onions and chopped cilantro, fold like tacos, and enjoy!
