Egg Salad

Easy Egg Salad:

Ingredients:

  • 6 eggs

  • 1/4 cup quality mayonnaise

  • 1 tablespoon Dijon mustard

  • 1/4 cup purple onion, diced

  • 1 tablespoon fresh parsley, chopped

  • Salt and pepper to taste

  • 2 pieces bacon, cooked and crumbled (optional)

Directions: Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat to low and simmer for about 10-12 minutes. Drain the hot water, and immediately transfer the eggs to a bowl of ice water to cool for a few minutes.

Once the eggs are cooled, peel and chop them into small pieces (or gently pulse them in a food processor). In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, purple onion, and parsley. Mix well to combine all the ingredients. Season with salt and pepper to taste.
